The non-targeted bycatch, sometimes called "Trashfish," often ends up tossed, shipped abroad or mislabeled. Opah, also known as moonfish, is a common tuna bycatch. Opah has a meaty and firm texture with a mild and delicious flavor, making for an excellent tuna substitute. Bake, grill, or fry as if this was tuna... just accidentally better! These opah cubes include all three kinds of meat found on the fish, so color variation is normal.
